Hey friends! Sorry there was no voice over for this vegan bacon recipe today. I had to change things up because *reasons.* Don’t freak out! It’s not going to be a normal thing on this channel.
This rice paper bacon was inspired by the posts I’ve been seeing over at What Fat Vegans Eat on Facebook, especially a post by Sweet As Vegan. They were inspired by a Danish blog. I’ve linked both below. It’s super easy to make and for you gluten-free folks, this vegan bacon happens to be gluten-free.
My version is crisp, salty, sweet and smoky. You can also fry these on a pan but it’s tricky; these things can burn fast! If you don’t cook them fully crisp, they will be a bit chewy. Some people love this, but I don’t love how it sticks in my teeth! The fully crisp kind doesn’t stick so YAY!

RICE PAPER BACON RECIPE
2 sheets rice paper (like this: http://amzn.to/1RdCdDz)
1 tablespoon smooth peanut butter
2 teaspoons light soy sauce
2 teaspoons nutritional yeast
2 teaspoons maple syrup
1/8 teaspoon chipotle powder (or 1/2 teaspoon liquid smoke)

Oven temperature is super important for this method: 350°F/175°C. Bake time is 10 minutes per side; 20 minutes total. Be sure to check during the last few minutes; this stuff can burn quickly.
You can just run the rice paper under the tap to soften the rice paper. Flick off the excess water. Then you’ll stack the two pieces together. Let it soften for a few seconds (literally) before cutting into strips.
The reason we use cold water is so the paper softens slowly, giving you time to cut the strips without it gumming up.
If the rice paper sticks to your fingers, just wet your hands a little.
The marinade is enough for 2 batches (4 pieces of rice paper) but one baking sheet only fits one sheet..so do what you like!
Feel free to switch up the ingredients too. Just keep the sweet/salty/savory in mind! You can also add a little oil if you want the bacon to be a bit shinier.
ALSO SUPER IMPORTANT! Watch that vegan bacon like a hawk during the last few minutes in the oven. This can burn fast so check it!
You’ll probably eat it right away but in case you dont, store it in a paper bag. Keep them dry.

We tried this recipe from the Pioneer Woman Cookbook with a few additions. We added star zucchini and carrots. And used five different types of peppers (red, purple, and green bell peppers, a small red hot pepper and one banana pepper) and three different types of potatoes (blue, red, and gold).
